Cloudflare Expert for moving name servers from Godaddy

I need some help with moving our .com DNS from Godaddy to Cloudflare. This process is not complicated but I want the transition to go as smooth as possible so we dont have an interruption with email or .com traffic. I am looking to get this project done within the next week or two. The import/export of dns records is very straight forward but I am not clear on what records need to be proxied and what records do not. I am not also clean on how the handle the subdomains I have created at Godaddy.
